Time:2013-10-15
Ergothioneine (EGT) is a compound discovered in 1909, originally found in a fungus called Claviceps purpurea. The pure product is a white crystal, water-soluble (can dissolve 0.9 mol/L at room temperature), and does not self oxidize in physiological pH and strong alkaline solutions. It has two isomers, namely thiol and thione, as shown in the figure on the right.
